Lufsa - Signature Dish From Öland


Dinner yesterday was a Swedish dish called Lufsa. It is a signature dish from Ôland. We have visited the island on several holidays. It's a very lovely island. We brought our bikes and it is a bike friendly area  - no steep hills or mountains and you can easily find routes with very little traffic.There are also numerous good camping facilities. But now the recipe:

7-8 big potatoes Peel the potatoes and slice thinly. Peel the onion and chop it. Grease an ovenproof dish with butter and put in the potatoes and onion .  Mix flour, egg, milk and spices and blend. (I use the blender blade on my Bamix) Pour it over the potatoes. .Bake in the oven for 30-35 minutes at 200 degrees Take the dish out and cover it with sliced yowl bacon. Bake again at 200 degrees for approx.  45 minutes  until the bacon  is crisp.
Serve with homemade rye bread and cranberry jam. 
1 big onion
2 dl flour
1 egg
2½ dl milk
salt
pepper
yowl bacon or bacon
 I use yowl bacon because I think it is more tasty than normal bacon.
